Our take on a traditional eggplant parmigiana, packed with mediterranean flavours & baked to perfection.
Our chefs have created a healthier version without comprising on taste. Our eggplants are slowly roasted (traditionally the eggplant component of this dish is often battered and fried), which results in a high calorie and high fat meal! We've left out the frying, which means you can now enjoy a great tasting meal & feel good too, without the guilt!
This dish includes layers and layers of our house-made traditional napolitana sauce, locally grown eggplants from Laftis Farms (Virginia, Adelaide), roasted mushrooms and cheddar cheese, and the final touch - some gluten free breadcrumbs for that extra crunch.
